Our Winemakers
Martin Moore - Cellar Master
Straight-talking Martin Moore believes in making
no-nonsense wines that speak for themselves
. He believes that the hills determine which wines are released under the Durbanville Hills label, underscoring his winemaking philosophy that the wines are made in the vineyards. The result is a
range of wines
that perfectly captures the areas'
varied character and rich fruitfulness
.
Martin's wines are full-bodied and the whites are, in his words, "fat". They are ready to drink within two years but Martin recommends that they mature for four to five years to develop to their full potential. He experiments with sediment contact and different types of wood when making his whites. Martin says research has shown that 84% of all wines are drunk within 24 hours of being bought and believes in
making wines for contemporary palates
and needs. Although he advises that his reds are aged before drinking for the optimum enjoyment, he always makes them so that they can also be enjoyed immediately.

Gunther Kellerman - White Winemaker
Seeing himself as the humble
middleman between the vineyard and the final product
, Gunther Kellerman says that poor grapes never produce quality wine. He credits the Durbanville Hills Valley terroir and the grape producing farms in the area as the secret to the success of Durbanville Hills' award-winning wines.
The magic of each year's harvest being different to the next is what makes winemaking so fascinating for him. He enjoys the particular
hands-on approach
of making white wine and singles out Chardonnay as his personal preference. Gunther is responsible for producing the ever popular Sauvignon Blanc which has become synonymous with Durbanville Hills.

Wilhelm Coetzee - Red Winemaker
Since Wilhelm Coetzee joined the Durbanville Hills winemaking team, he's dedicated his time to ensuring we produce only the best red wines. He first studied analytical chemistry at the Cape Technikon and after a number of years working as an analytical chemist for Denell, furthered his studies at the University of Stellenbosch with a BSc in Viticulture and Oenology. Wilhelm believes in
being actively involved in the vineyards
throughout the growing and ripening seasons and is very focused on detail in the cellar, stressing that a winemaker can never check the tanks often enough during vinification.
When not in the vineyard Wilhelm spends his weekends cooking flavourful food matched with exceptional wines, such as succulent Karoo Leg of Lamb paired with a velvety Durbanville Hills Cabernet Sauvignon. A lover of nature, he regularly takes long walks and spends many afternoons gardening.
