Created
by Chef Charl Coetzee and sommelier Welma Beukes, this gourmet food pairing
features Creative Block 2, 3 and 5 as well as Spier’s Late Bottled Vintage 2007
- a collaboration that both honours individual flavours, as well enhances them
to form new ones.
Creative Block 2 (Sauvignon
Blanc/Semillon)
Paired with goat cheese and cauliflower
with roasted almonds
Semillon spotlights this dish’s creamy texture, placing the almonds on centre
stage. Not to be outdone, the crisp Sauvignon Blanc cleanses the palate with a
lingering nutty curtain call.
Creative Block 3
(Shiraz/Mourvèdre/Viognier)
Paired with venison and apricot curry
This blend has both fruitiness and finesse in equal measure. With Shiraz
leading the charge, it’s more than able to hold its own against the curry’s
spice and coriander. Mourvèdre steps in to elevate the meaty venison, while the
Viognier's perfume echoes the apricot's sweetness.
Creative Block 5 (Cabernet
Sauvignon/Merlot/Cabernet Franc/Malbec/Petit Verdot)
Paired with gorgonzola and roasted sesame
seeds
This Bordeaux-style blend offers multi-layered flavours, with each grape
bringing their unique characteristics to the wine. Tobacco and toasty aromas
turbo-charge the roasted sesame seeds, while the wine’s smoothly structured
tannins seduce the gorgonzola’s tart creaminess.
Spier’s Late Bottled Vintage 2007
Paired with chocolate meringue cake
High alcohol levels slice through the cake’s richness, while the wine’s black
fruit aromas mirror its dark sweetness.
