This Cabernet Franc has been sourced from a vineyard which has shown over time to produce top quality wine. Whilst Cabernet Franc is mainly used as a blender to provide highlights of perfumes, florals and spice, the 2010 showed an extraordinary level of palate complexity which warranted this wine being selected as a stand-alone varietal for the Mentors label.
Thus the 2010 Cabernet Franc is a wine which meets our philosophy of honouring the diversity of terroir and climate and we hope that climatic conditions will in the future align to allow a similar quality.

Winemaker's Comments
The name of the game when crafting the perfect Viognier is patience, with nerves of steel. Frequent tasting and consultation between the viticulturist and the winemaker resulted in the grapes being harvested at the optimum time. Working with Viognier is a challenge from year to year, as this grape variety is unpredictable. Crafting the Viognier grape into a wine of this nature is truly a work of art.

KWV The Mentors Chardonnay 2011
A well balanced and medium bodied wine, displaying the true characters of cool climate Chardonnay from Elgin. The nose has beautiful floral, citrus blossom and apricot aromas with fresh lime and mineral tones. This elegant wine has subtle hints of cedary oak, raw almonds with a lively and persistent lingering finish. Barrel matured for 9 months and also in the bottle for 6 months prior to release.
Winemaker's Comment
Producing a Chardonnay under the Mentors label has been a vision and journey for a couple of years. The whole journey began by experimenting with grapes from various vineyard sites and applying different vinification techniques to them. Skillful selection of oak by cooper, forest type and toasting level, all to ensure that the true grape attributes and fruit characteristics are complimented and amplified by the oak. To achieve our vision, we kept in mind that Chardonnay is known to be more easily influenced by winemaking techniques. Thus the reasoning behind vinifying the same juice, as 4 separate components; then blending them back together proportionally. All of this was done with the sole purpose to produce a world class, stylistic wine filled with individuality.

With this wine we pay tribute to one of South Africa’s greatest red grape varietals (always the bridesmaid, never the bride) commonly used in blends where it contributes structure, colour and intensity.
We took all these varietal attributes and combined them with grape growing and winemaking techniques, like customized tannin management and maturation specific to the varietal. These practices ensured maximum display of fruit flavours, enabling the wine to stand alone as a formidable Petit Verdot. The extreme dedication in crafting this wine predicts an exceptional year for Petit Verdot.

The wine bursts with fragrances of gooseberry, lime, asparagus and passion fruit. Juicy and concentrated, the focused palate stampedes with an intensity of fruit flavours, minerality and flint. The wine shows a well-integrated yet vibrant and refreshing acidity, which ensures for a lingering finish.
Wine making:
This wine was made using reductive processing from crushing to bottling. Crushing was slow and gentle to ensure that the grapes cooled sufficiently to prevent oxidation of juice. Skin contact of three hours was allowed to reach the desired acidity level. Settling of juice was allowed for 48 hours, followed by careful racking to the fermentation tank. Fermentation was allowed at 16 – 18 ?C up to 3% alcohol level to promote thiol flavour conversion. Thereafter the wine was fermented at 12 -13 ? C to preserve the fruit flavours. 100% tank fermented, this wine spent 60 days on the fermentation lees. The lees was stirred up once a week, to enhance the mouth feel of the wine.
