		  <intro>With no flash or fanfare, the family owners have turned this once run-down property into an award-winning red-wine boutique winery in Stellenbosch.  Perfectly situated on the cool, southern slope of the Helderberg Mountain it has 20 hectares under cultivation. Cabernet Sauvignon, Shiraz, Merlot, Cabernet Franc, Petit Verdot, Roobernet and Malbec grapes allow for the creation of truly exquisite exquisite hand-made red wines. 2005 was the first harvest entirely of own grapes, from vineyards replanted since 2000.  It has a personal wine tasting venue for audacious wine route explorers.  The focus is firmly on quality rather than quantity, the grapes are hand picked and, to ensure that quality is preserved, the blocks are fermented seperately in small tanks. Primarily French oak is used for maturation. Once the wine is bottled it is allowed further bottle maturation before it is released.</intro>

		  <intro>Bilton Wines is situated on the foot of the Helderberg Mountain and is&amp;nbsp;blessed with old world charm and&amp;nbsp;character. It was in 1726 that the first vineyards were planted. Grapes and vegetables were originally supplied to ships passing the Cape of Good Hope.&lt;br /&gt;&lt;br /&gt;The beautiful old&amp;nbsp;Cellar dates back to 1824 and has been meticulously restored to stand as a heritage building and our tastingroom. It is now, almost 300 years later that we are proud to produce our own range of wines. Our 1998 maiden vintage&amp;nbsp;of&amp;nbsp;Merlot&amp;nbsp;was soon&amp;nbsp;followed&amp;nbsp;by a Cabernet Sauvignon and Shiraz.&amp;nbsp;The Bilton Private Collection&amp;nbsp;consists of&amp;nbsp;&apos;The Bilton&apos; - The Cabernet Sauvignon grapes were handpicked form the oldest vines on Bilton and spent 34 months ageing in 100% French oak barrels and 500% in new oak, which is unheard of for South African wines. The result is a monumental dark and aromatic wine that will continue to mature to well over 80 years under ideal cellar conditions.&lt;br /&gt;&lt;br /&gt;Our newly released Viognier 2008 was also made&amp;nbsp;in a way that is a technique rarely used for white wine in South Africa. Grapes were sourced from an individual block, berries hand selected before undergoing fermentation on the skins- it took winemaker Rudi de Wet almost a decade of trail and error before producing the result he sought. The wine then spent 12 months ageing in barrels, 75 % in oak and 25% in Acacia.&lt;br /&gt;&lt;br /&gt;Sir Percy, french classic in style is a&amp;nbsp;wine named after the owners&amp;nbsp;Grand father, Percy Bilton. In 2010 it was selected as one of the top 100 wine in the world&amp;nbsp;and we were invited to show this wine in the VIP tasting area at the Miami wine show,&amp;nbsp;received a Grand Prix award in Poland in 2011 and a Decanter Silver medal at London Wine Trade Fair.&lt;br /&gt;&lt;br /&gt;For the more adventurist we have our infamous Matt Black Pirate blend which is now&amp;nbsp;accompanied by his&amp;nbsp;maiden, Sauvignon Blanc 2011.&lt;br /&gt;&amp;nbsp;&lt;br /&gt;Ensuring this quality for Bilton&apos;s wine costumers around the world, the Private Collection and Cellar Selection is fitted with a&amp;nbsp;unique and tamper-proof security tag called the &amp;quot;bubble tag&amp;quot; developed by a company called Proof tag.&amp;nbsp;This is attached to the neck of each bottle of wine produced on the farm and serves as a digital fingerprint that prevents counterfeiting of our wines and allows the owner of the bottle to check its authenticity online. 		  <intro>A small 4 hectare farm bought in 1997 by the Orpen family, previously planted with Chenin Blanc &amp; Cinsaut, grapes delivered to the Stellenbosch vineyard co-op. Good practice for a new farmer. Soil analysis suggested noble varieties so with great help from well-known viticulturist Paul Wallace it was decided to replant with the noble cultivar SHIRAZ. The cool breezes straight off the sea ensure cool &amp; slow ripening. The ground was deep ploughed &amp; replanted with Shiraz in 1999 &amp; our first cultivar was made from 2-year-old vines (we took about 850 kg off the 4 hectares) &amp; the 2001 received 4 stars from Wine magazine. Unfortunately only 500 bottles were made which were quickly snapped up. In 2002 we built a cellar in time for the 2003 vintage which was awarded 4 stars by Platter. Our frequent exports to Germany reveal first-class feedback; they awarded 89pnts out of 100. 2004 has been released &amp; rewarded 4 stars by John Platter. 2005 has seen the birth of a delicious Cab/Shiraz Blend &amp; superb Shiraz Reserve which we look forward to releasing in 2007.</intro>
