Steenberg Harvest 2017 and February Offerings

Harvest 2017 kicked off with a delivery of hand-harvested Chardonnay grapes from Robertson destined for our MCC. Pinot Noir grapes have come in steadily from Darling and Robertson as well as Sauvignon Blanc from our own farm for our Sparkling Sauvignon Blanc. These grapes have shown tremendous quality and we are looking forward to the rest of this harvest.

New to the team this year is Ernie, our concrete egg-shaped fermentation tank. We will be using this tank mainly for our Steenberg Rattlesnake Sauvignon Blanc to add more texture and mouthfeel.

“The thermodynamics of these concrete eggs essentially assist in the oxygenation and fluidity of the wines, resulting in longer lees contact while protecting the delicate flavour profiles inherent in our cool climate grapes,” says cellarmaster JD Pretorius.

While still in the experimental stage, be sure to look out for the 2017 vintage once it is released towards the end of the year.

Lunch Special at Catharina's Restaurant
Catharina's has launched a value-for-money 2 or 3 course lunch special with 2 choices per course. As a starter, choose between Chicken Caesar Salad or Mushroom Risotto. For your main course, choose between Sirloin Steak or Seafood Linguini and for dessert, indulge in a Rooibos Crème Brûlée or Trio of Sorbet.

Valentine's Day at Catharina's Restaurant
Spoil your loved one with a romantic 5 course dinner at Catharina's Restaurant on the 14th of February.
Chef Archie Maclean has created a menu with wonderful flavours and delectable ingredients. Enjoy oysters and bubbly on arrival followed by courses of Foie Gras, Norwegian Salmon, Beef Fillet and two dessert courses focused on Strawberry and Chocolate. End off with Coffee and Petit Fours.

A Day in Constantia & Surrounds

There is plenty to see and do in what many people are calling the "Constantia Valley Revival." This is due to the surge of new lifestyle experiences popping up in the valley.

In addition to the facilities located on Steenberg Farm; drive along the wine route to experience new restaurants at Beau Constantia and at the top of Constantia Nek with world-class wines to match. For something a bit more strenuous, ride one of the many mountain bike routes along the mountain and green belt or take part in acrobranching through the tree canopies.

Pop over the mountain to visit the African penguins at Boulder's Beach or stroll through the cultural suburb of Kalk Bay. The options seem endless with a perfect balance of activities for all ages and interests.

A Taste of Tapas at Home
Treat yourself at home with Chef Kerry Kilpin's recipe for Smoked Pork and Manchego Croquettes. Pair this dish with a glass of Steenberg Semillon for an extra special meal.

Ingredients for the filling (makes 24 croquettes)
50g butter | 1 small onion finely chopped | 80g flour | 250ml milk | 150g finely chopped bacon | 50g manchego cheese (substitute: parmesan) | 50g pecorino | 1 tsp Dijon mustard | 20ml cream | 250g potatoes: boiled and mashed

Ingredients for the coating
2 large eggs | 50g flour | 140g panko bread crumbs | sunflower oil for frying

To make the croquettes, melt the butter in a medium saucepan and gently fry the onion and bacon for 3 minutes or until lightly coloured. Stir in the flour and cook for 30 seconds. Gradually add the milk, stirring constantly, and cook over a low heat for 5 minutes until thick and glossy. Stir in both cheeses, mustard and cream and season to taste. Cook for 1 minute more until the cheese melts, stirring constantly.

Add the mashed potato and allow to set in the fridge. It should firm up nicely once cold.

- Take heaped teaspoons of the mixture and, with wet hands, roll into 24 small oval shapes and put on a tray. Place in the freezer overnight.
- When ready to fry; beat the eggs for the coating in a shallow bowl, put the flour on a plate and half of the bread crumbs in a bowl.
- Roll the croquettes in the flour, followed by egg and lastly in the bread crumbs to coat.  Place on a baking tray.
- Heat up your oil in a deep fat fryer to 180 degrees. Fry the croquettes until nicely golden.
- Serve with whole grain mustard and mayonnaise. Enjoy!
