Third Cap Classique Technical Seminar Day

The Cap Classique Association is proud to announce the program for the third Technical Seminar Day which will be held on Wednesday 25th July 2011 at Joostenberg Conference Center, Stellenbosch.
To avoid any disappointment please book now as the tickets are selling quickly. This year promises to be even better and different topics than last year.

The program is as follows:

08h00 to 08h50 – Registration
09h00 to 09h15 – Welcome by Chairman, Pieter Ferreira and Update on Cap Classique.

09h15 to 10h45 – Session I

CMC Cold Stabilization and Influence on Protein Stabilization – Presented by Nick Carkeek and Nicolas Follet from AEB and Oenosense Consulting.

The Science of Tank Cooling – Presented by Tony Gerrans from Grotto Defranceschi.

Jetting Technology at Disgorging - Presented by Alain Bourgeois from IOC, Champagne and CDS-Vintec.

10h45 to 11h15 – Tea Break

11h15 to 13h00 - Session II

The Studies on Sparkling Wine Cork Stoppers - The presentation will have three parts:
  • Technical specifications on Sparkling corks: Results of a study made in collaboration with Moët and Chandon.
  • Technical performance of the product.
  • Sensorial neutrality – Presented by Miguel Cabral, Research and Development, Amorim and Irmãos, S. A.
CO2 and O2 parameters in Champagne wines production: Bottle fermentation closures, Disgorging and Expedition closures - Isabelle Tribaut-Sohier from the Comité Interprofessionnel du Vin de Champagne (CIVC)

"Leveraging the Internet to grow your brand online" - Presented by Stacey Rumble of BrandsEye.

13h00 to 14h15 – Lunch Break
14h30 to 17h30 – Session III
