On Friday 26 July 2013 The Twelve Apostles Hotel and Spa will be
hosting its popular monthly Food & Wine Pairing Dinner in Azure
Restaurant, this time in association with Franschhoek’s Chamonix Wines.
Acting Executive Chef Christo Pretorius and his team will be joining
forces with winemaker Gottfried Mocke from Chamonix Wines to present a
mouth-watering four-course menu.
Boasting some of the highest planted vines in the Cape Winelands, Chamonix is blessed with cool breezes during the hot summer months and stony, clay-rich soil. Winemaker Gottfried Mocke believes in the power of minimal intervention and environmentally conscious farming methods, working hand-in-hand with nature. The wine farm offers a seamless blend of unspoiled nature, welcoming hospitality and a host of culinary and viticultural delights, which Mocke looks forward to showcasing at Azure.
Chef Pretorius will start the evening with Scallops, presented with king oyster, pickled shimeji, almond shortbread and citrus gel. Gottfried Mocke pairs this light seafood starter with his Chamonix White Reserve 2012. This is followed by Smoked quail with toasted pearl barley risotto, peas, raisins, ginger and quail jus, matched with Chamonix Chardonnay Reserve 2012. For the third course Chef Pretorius has chosen Lamb loin, served with confit belly, chick pea, butternut, rhubarb and peppercorn jus. Chamonix Pinot Noir 2012 offers the perfect accompaniment to this hearty winter dish. The final course is another savoury delight - Slow cooked beef brisket with pommes Dauphine, carrot, vanilla, black cherry and juniper jus, beautifully presented with Chamonix Troika 2011. For a sweet touch, Petits Fours will be served with tea and coffee.
