5 Summer wine and food pairings

Hone your culinary skills and master the art of wine and food pairing with these easy peasy recipes.

Here's 5 simple food and wine pairings for you to try.

Butternut, feta and tomato tart
I like to cheat with my cooking and therefore buy my puff pastry (who even has time to make that stuff anyway?).
This recipe is so simple you could probably do it intoxicated. 

All you need:
- 2 small (big enough for two people) sheets of puff pastry.
- 1 butternut.
- Small punnet of baby tomatoes.
- Feta.
- Seasoning.
- Balsamic, just a tablespoon.
- Olive oil. Same as above.

Peel and cut the butternut into small, 1cm chunks.
Score the puff pastry and by that, I mean, using a knife, gently make a margin around the inside of each sheet. The outside line will then "puff" up.
Roast the butternut and tomatoes, with a good drizzle of olive oil and balsamic, in the oven until golden and soft. A slight burn is fine.
Pop the mixture into the middle of the puff pastry pieces. Place in oven at 180 until the pastry edges rise and it's cooked through.
Tuck in.
What to serve it with: Unwooded chardonnay.
I paired mine with Obikwa chardonnay. It's a complete steal and the pairing is phenomenal.

Granadilla sorbet
I just love Sam Linsell's (Drizzle & Dip) recipes and this sorbet one is no exception. Simple, yet yummy and she takes the best photos.

Makes about a litre.

What to serve it with: Sweet, straw wine.
Fairview La Beryl Blanc is a beautiful, citrusy wine that needs to be served chilled. You can either pour some over the sorbet or have the two separate. Let your taste buds decide.

Raspberries
Yes. This is literally a bowl of raspberries (or strawberries). Any red berry that is in season.
Woolworths have a huge range, though they can sometimes be quite pricey. Your best bet might be to head to one of the Saturday markets. I once bought pomegranates for R5 at the Stellenbosch market.

What to serve it with: Fruity, low tannin red.
Kleine Zalze Gamay Noir springs instantly to mind. Serve the wine chilled and I guarantee you will love it.

Mango and Avocado salad
Something that sings summer and heat waves. Fruity and filling.

7 Ingredients. 4 servings. Almost too simple.

What to serve it with: wooded chardonnay or, if you're feeling brave, cabernet sauvignon.
Cab sav might seem like an odd mix but the tannins in cab just adore fatty foods. The miracle of the avo is that it will coat your palate and be just perfect with the cab. For hotter days, a wooded, more citrus-rind, chardonnay will work.

Thai ground pork salad
Nothing like some sweet, tangy and spicy flavours to munch on. This salad recipe is for all the meat eaters who thought the above was too wishy-washy for them.

40 minutes prep. Serves 6.

What to serve with it: Riesling.
Spicy foods need a floral, low alcohol wine and I think Thelema's 2011 riesling is fantastic.
