Because everyone involved with the
Cape Wine Academy is passionate about wine, our objective is to enhance other
people’s enjoyment of wine by providing them with knowledge about vines and
grapes, and about the way wine is made. Over 110 000 people have enrolled in
courses since 1979, participants hailing from not only this country but from
the rest of the continent and overseas.
Course overview
The Certificate Wine Course is made up of 7 two-and-a-half hour lectures, and
consists of theory and tutored tastings OR 3
full-day lectures.
During this course students will learn in
depth about Viticulture: Seasons of the vine: how to establish a
vineyard, Pests and diseases, Wine growing areas of South Africa; Winemaking:
from arrival at cellar till final product, the art of blending, wood
treatments, innovations in winemaking. Brandy: distilling, the process of
production, Different styles; Fortified Wines: Sherry, Port, Fortified Wines; Sparkling
Wine: methods of production, different styles, learn the art of Sabrage; Late/Special
Late and Noble Late Harvest wines – definition & different styles.
