Fairview’s Traditional Brie and Camembert is made using a traditional recipe. These full-flavoured, soft white-mould cheeses with their creamy, mushroom-like flavour will ripen from the outside towards the centre. Enzymes produced by the white mould interact with the cheese proteins to give it that characteristic soft texture and a flavour that intensifies with ripening.
