According to cellar manager and winemaker, Elunda Basson, despite the bar having been set exceptionally high after Desiderius 2008 was met with rave reviews, 2009 has delivered what promises to be a spectacular vintage year. “With 2009 having been noted as one of the healthiest and best harvests for South African winemakers, we believe that we have a notable platform to work on for a superior vintage offering.”
Handcrafted in a uniquely-styled fluted bottle that epitomises elegance, quality and nobility, Basson says that the magnificent Cap Classique encapsulates grace and exceptional character. “A blend of Chardonnay and Pinot Noir crafted in the classic French tradition, but harvested proudly on South African soil, this vintage spent a minimum of four years on the lees (spent yeast cells) before the sediment was removed by the time honoured method of ‘remuage’ and ‘degorgement’.”
Basson adds that this prestige cuvée is the ultimate pairing with bitter dark chocolate, duck liver parfait and Orange Blossom scented petit fours. “It is alluring with a rich complexity and a slight green tint that teems with lively bubbles. Nuances of fresh fruit, almonds and rich buttery bread, delight the senses.”
