Perdeberg The Dryland Collection Tenacity Shiraz 2013 & Dianne Bibby’s Chinese Mandarin Chicken Tray Bake

As a bush vine growing in dryland conditions, you need tenacity to keep going through the heat at the end of the summer to produce fine small berries which means a larger ration of skin to juice.

The Perdeberg The Dryland Collection Tenacity Shiraz 2013, is a contemporary Shiraz and a fine example of a wine made from vineyards grown under dryland conditions.

Cellarmaster Albertus Louw and his team apply traditional elevation in the cellar with open top fermenters with punch downs during the fermentation. The wine matures for 19 months in French oak barrels before being prepared for bottling.

It looks like
Bottled under natural cork closure in a Bordeaux shaped bottle. The livery is simple and enchanting showing dry land vines. In the glass, it is a deep bloodplum at the core which pales out to ruby garnet at the edges.

It smells like
As is the case when using small berries, this wine shows voluptuous aromas, spicy with hint of white pepper, cloves, fresh tobacco and violets – and a generosity of plum and berry fruits.

It tastes like
Shows tones of mulberries, cherries and fynbos, while the structure is broad with delicate tannins and a rich aftertaste, it leaves you with much food for thought.

It’s good with
A wine like this is good as a glass on its own, but for sipping rather than quaffing. It is a perfect food wine and will happily accompany anything from the braai or most spicy foods.  Interestingly it is happy with a full flavoured chicken or tuna dish. Dianne Bibby’s Chinese Mandarin Chicken Tray Bake with its hearty flavours, is a perfect match.
