Underground Cellar

Exactly 300 years after Cabrière had been granted to Pierre Jourdan, the cellar was opened at the second property Haute Cabrière - named after the position above the valley, with ‘high’ in French translated to ‘haute’.

The underground cellar was created, with Achim drawing inspiration from the underground cellars of Europe. The design makes use of gravitation to highlight the philosophy of minimal intervention.

The iconic barrel cellar is home to French oak barrels and is visible to guests visiting the farm.

In 2013, Takuan von Arnim took over the reins as Cellar Master from his father. Tim Hoek, Head Winemaker and Viticulturist, joined Takuan in 2014.

The founding philosophy is shared by the current generation, taking inspiration from the unique terroir of Franschhoek. The aim is to showcase the unique characteristics of the cultivars of Chardonnay and Pinot Noir, with oak playing a supporting role rather than overpowering.
