Fairview Darling Sauvignon Blanc 2013

Notes of passionfruit accompanied by bright citrus aromas on the nose. Grapefruit and subtle lime fill the palate and linger on the finish. The acidity gives good length and the mouthfeel is full, rich and textured.

in the vineyard : Grapes were harvested from unirrigated vineyards in Darling. The vines are trellised and planted on deep red oakleaf soils.

about the harvest: Harvest Dates: 08 February to 16 February 2012

in the cellar : The bunches were destalked and lightly crushed. Only the free run juice was used. The juice was settled and then fermented in the stainless steel tanks at 11-13°C. After fermentation the wine was left on its fine lees for two months prior to blending and bottling.
