about the harvest: Harvested in February and March 2011.

in the cellar : Up to 30% whole berries were allowed in the mash. Three rack and return transfers were executed daily during fermentation.
The entire process was carried out with the aid of overhead gantry cranes and satellite tanks to enable minimum handling and the use of gravity to preserve fruit flavours.
This wine is matures in varying ages of 300L French Oak barrels for 6-8 months
