Waverley Hills Cabernet Sauvignon Merlot 2011

Bright red edge with a deep ruby centre. The wine has aromas of black cherry, blackcurrant, mint and chocolate. On the palate, soft with ripe tannins and a long follow through of chocolate, ripe fruit and mocha.

ageing : Cabernet Sauvignon 2011 was aged for 12 months in 50% new and 50% first fill barrels, 10% American and 90% French oak. Merlot 2011 was aged for 18 months in 100% 1st fill French oak. All 225 barrels. Cabernet Sauvignon 2012 was aged for 7 months in 70% french oak and 30% American oak chips.

in the vineyard : Oakleaf soils, with drip irrigation delivering an average production of 7 tons/ha.
