in the vineyard : Fruit for the 2011 Viognier was sourced from vineyards on the Fairview farm and the Agter-Paarl. Both sites are trellised and grown on predominantly decomposed granite soils.

in the cellar : The grapes were gently pressed and most of the juice was fermented in stainless steel tanks. A small portion of the wine was barrel fermented, adding mouth-feel and complexity. The wine was allowed 6 months lees contact in tank prior to bottling.
