in the vineyard : Microclimate: Atlantic influenced, cool microclimate.
Soil: High potential, poor gravel and pot clay.
Vineyards: Old bush vines established in 1971.

about the harvest: Yield: Hand-sorted grapes, 5 tons/ha.

in the cellar : Fruit undergoes fermentation in 100% new American oak; The process whereby the desired vanillin’s get imparted to the wine. Directly after fermentation the wine is removed from American oak, together with its lees, and placed in 3 and 4 fill barrels for a further 6 months for natural stabilisation. Bâtonnage is carried out on a weekly basis to add complexity and a ‘buttery’ mouth feel.
