about the harvest: The grapes are picked from old bush vines (35 years old) at full ripeness for a specific full style Chenin Blanc.

in the cellar : The grapes and berries are hand selected (500 man hours of sorting) and only the best is kept. The juice is handled cold oxidative. Skin contact is given for up to 36 hours for maximum extraction. Natural fermentation (no yeast added) in wooden French oak barrels for 6 months. After fermentation the wine is kept on the yeast lees for 6 months before it is racked and bottled.
