in the vineyard : Pinot Grigio is best suited to cool mountain slopes where it produces richly honeyed dry wines. To achieve the classic Pinot Grigio characteristics, we source grapes from many small blocks with micro-climates that are perfectly suited to the variety, one of them being our Altima property, some from Franschhoek and also from Groenekloof area.

about the harvest: This wine is produced from handpicked grapes

in the cellar : Produced from handpicked grapes and pressed immediately to avoid any colour extraction from the blue/grey grape. A slow fermentation proceeds, to allow time for the true potential of the Pinot Grigio grape to be unveiled. It is the kept on the fine lees for about 6 months then bottled.
