ageing : This wine is drinking exceptionally well now and will continue to do so till the end of 2018.

      Rich peppery flavours, chocolate, coffee, log fires, the Deep Level Shiraz has it all. Depth of character, this one will appeal to the true Shiraz lovers. 100% Shiraz grapes, 18 months in the barrels, 14% alcohol perfect for now or to give to a good friend to keep up to 2017. Need we say more?
in the vineyard : Tree wire Perold trellising, the Shiraz was planted in 2003.
about the harvest: Picking started when the grapes were at 24.6°Balling, the acidity in the vineyard were still well above 6 g/l with pH at 3.6.
in the cellar : Fermentation started immediately using WE372 as yeast - generally warm fermentation at below 30°C with pump-overs twice a day. After secondary fermentation the wine was transferred to 2nd and 3rd fill French Oak barriques and aged for 18 months.
