ageing : Enjoy now

in the vineyard : Yield: 15 tonnes/ha. Grapes are selected from the cooler areas within the Lutzville valley where the grapes give excellent aromatics and fruit forward flavours.

about the harvest: Vinification two weeks later than normal due to the cooler temperatures in December 2012. Cool evenings and moderate warm days meant we had to wait a little longer fot the grapes to reach full maturity.

in the cellar : Once grapes are harvested, they arrive at the winery where the fruit is gently pressed and only the free run juice is used. Using selected yeasts the juice then undergoes cold fermentation at 14 degrees Celsius for 2 weeks before lying on the lees for 3 months.
