in the vineyard : Vineyards: Grapes were sourced from select vineyard sites in Paarl-Paardeberg, that are planted in soils of decomposed dolomite granite and deep weathered shale, with a good moisture retention capacity. Most of the vineyards are located on the cooler east-facing slopes.
Vintage: A cold, wet winter leading up to the 2013 harvest ensured that soils were sufficiently moist, resulting in even budding and good growth. Weather during harvest was moderate,
with some light rainfall providing a cooling effect as well as some natural irrigation to aid with ripening. Small berries translated into wines packed with intense, concentrated fruit flavors.
in the cellar : The grapes were de-stemmed, crushed and left to cold soak for two to three days. The individual components were then fermented on the skins in stainless steel tanks until dry, with gentle pumpovers performed regularly. The wine underwent malolactic fermentation in tank and was aged in French oak for six to seven months.
