Bellingham Ancient Earth Sauvignon Blanc 2014

Pale gold with a vibrant green glow. Beaming with tropical pineapple, pear and passion fruit aromas lead to a lively entry and generous Cape gooseberry and ripe fig flavours against a touch of herbaceous green pea intrigue finishing with delectable fresh and feisty fruitiness.

Best served chilled as a refreshing aperitif or for enjoyment on its own. Delicious with spicy crab wontons, prosciutto and asparagus risotto or prawn, lime and chilli linguine.

2012 was a great vintage for Sauvignon Blanc with a long cool ripening period that produced soft ripe fruit with good complexity, varietal character and balance.

about the harvest: Hand harvested between 21° and 24°B in early February.

in the cellar : Crushed and cold fermented at 16°C in stainless steel. Extended contact with the gross lees stirred up periodically adds richness and mouth feel. Final blending and bottling takes place at our cellar.
