Kleine Zalze Cellar Selection Chardonnay 2015

This is a really vibrant and lively wine bursting with aromas of green melon and Bartlett pear. These flavours follow onto an elegant palate with some white peach and an oyster shell-like minerality intermingled with a citrusy raciness.

The rich texture and vibrant acidity mean this wine will be a great complement to most light summer-time dishes.

in the vineyard : Even though we experienced one of the cooler growing seasons in memory, we still had a much earlier than normal harvest, owing to the early spring weather. This meant that we had a relatively long growing season characterized by quite constant yet moderate temperatures and very little precipitation. The result was perfectly ripe grapes with very vibrant natural acidity. All the Chardonnay was harvested early in the morning to ensure it arrived at the winery in optimum condition. The higher altitude Stellenbosch vineyards that face False Bay contribute texture and fruit, while the Robertson vineyards generally contribute more minerality owing to the limestone based soils.

about the harvest: All the vineyard parcels were harvested and vinified separately.

in the cellar : All the grapes were given 12 to 24 hours extended skin contact before only the free-run juice was transferred to tank for fermentation. The wines were fermented at low temperatures with selected yeast strains to highlight each vineyard's specific characteristics. After fermentation the wine was left for a further four months in contact with the lees before putting the final blend together.
