about the harvest: The grapes are harvested early in the morning and pressed.
in the cellar : The grapes are pressed, separating the juice from the skins. The juice is settled and cold fermented in a stainless steel tank for 3 weeks. The wine was left on fine lees for 3 months prior stabilization and bottling.
