Neil Ellis Stellenbosch Cabernet Sauvignon 2013

Deep, dark garnet colour and a bright ruby edge with aromas of current, blackberry and plum. Compelling flavours of cherry and plum with black pepper spice. Full bodied wine that finishes with soft tannins and a hint of peppery cassis. Overall the wine is youthful, mouth filling and bright.

in the vineyard : 

The Jonkershoek Valley and more specifically the south facing slopes are of the coolest sites in Stellenbosch. The vineyards are also influenced by southerly breezes during the summer months which have a beneficial effect. Further parcels of fruit are sourced from complimentary sites within the Stellenbosch area.

Trellised vineyards with supplementary irrigation grown on mainly decomposed granite soils.

about the harvest: 

Harvest commenced on 5th March. Grapes were harvested between 24.8°B and 25.8°B with a total acid of 7.1 g/l and a pH of 3.5.

in the cellar : 

Fermentation initiated in stainless steel tanks. The crushed grapes underwent a series of pump overs until dry. Further maceration was allowed before drawing off and light pressing. Malolactic fermentation was completed in French oak barrels.

The wine spent 18 months in 25% n 1st fill French oak barrels.

Bottled in December 2014.
