in the vineyard : 

The grapes were sourced from vineyards in the Philadelphia and Darling areas. The vines, situated some 50 m to 100 m above sea level and planted between 1985 and 2000, are grown in decomposed granite, gravelly and Tukulu soils and are grafted onto nematode-resistant rootstocks Richter 99, R110 and 101-114.

about the harvest: 

The grapes were harvested by hand at 21º Balling in February.

in the cellar : 

After crushing, skin contact was allowed for a period of 12 hours after which the grapes were pressed and the juice settled overnight. The clear juice was fermented dry in temperature-controlled stainless steel tanks for a period of two weeks at 16ºC.
