in the vineyard : Fairview cellar - with its spectacular view of Table Mountain - lies on the south west slopes of Paarl at the Cape of Good Hope. Established more than 300 years ago, Fairview has been in my family for three generations. Our committed team carefully guide the wine from the vine to the bottle, capturing yet another perfect Cape summer. A harmonious blend of fruit and spice, balanced with well integrated oak - will benefit from additional cellaring.

The 2005 vintage was a warm vintage yielding ripe full flavoured wines. Part of the fruit is grown at Fairview on the south western slopes of Paarl Mountain. The Fairview Shiraz vineyards are primarily on decomposed granite soils, and have drip irrigation. The other component of the blend is from dry land vineyards in Agter-Paarl on deep Malmesbury shale soils. Average yields of Shiraz are kept to below 7 tons/ha by vigorous green harvest.
