in the cellar : Fully matured Shiraz grapes were handpicked and transported to the cellar for prompt processing. A cold maceration period of two days was followed by wild fermentation in stainless steel tanks with regular pumpovers. Maturation in 4500L oak vats & small oak barrels commenced after fermentation for 36 months.
