in the vineyard : Harvested at full ripeness (24.5°B) from 2 West-facing vineyard blocks aged 15 and 18 years respectively.

about the harvest: 3 March 2017

in the cellar : De- stemmed, and then cold-soaked for 2 days. Inoculated with yeast and pumped over regularly.
Malolactic fermentation then took place in tanks after which the wine was aged in second and third fill French oak barrels for 24 months. Thereafter, it was lightly filtered and bottled.
