South African Sommelier Association
The course is constructed and taught by
professional members of SASA over a period of three days covering the practical
aspects of the trade as well as the managerial back-of-house elements that are
hard to acquire on the restaurant floor. Modules will include wine list
construction, service training and wine faults. The certification will be
validated after a number of hours on the floor and is one of three levels of
sommelier certification that SASA wants to implement on the long run.
It is
recommended that the students have previous beverage training or qualification
in line with WSET Level 2 or the Cape Wine Academy’s Certificate Course or
higher, coupled with a minimum of 2 years front-of-house experience in order to
benefit fully from the course.
The course will be followed by a fourth day
of examination which will cover theory, blind tasting and practical dining room
work. The examination will also be available to anyone willing to sign up
without any pre-requisite to attend the Fundamental Sommellerie course. Upon
successful completion of the examination the candidates will be awarded the
title SASA Sommelier.
The first
course will be taking place in the Western Cape during the month of November, 2015,
followed by the first examination in early December. To receive further
information and to book the course or the examination, please contact info@sommeliers.org.za
