Mediterranean - rainfall ± 650mm per annum. Vineyards situated on northern slopes and at the end of the valley hence slightly warmer conditions.
Soil
Deep red soils. A mixture of weathered granite and a small percentage of clay, Clovelly and Hutton structure.
Grape Variety
Cabernet Sauvignon 75% and Shiraz 25%
Vinification/Maturing
The grapes were harvested between 14 February and 17 March 1996 and picked at 23º balling. Fermentation took place in open top fermentors for a period of 7 days. The wine matured for 23 months in 100% new barriques and no fining was used.
Tasting Notes
Colour : Superb dark colour, deep and clear Great richness.
Aroma : Smoky, oaky, red cherry bouquet, black berry fruit, spice and vanilla.
Pallet : Rich attack, complex, spicy, prune aromas, blackcuffant jam, well blended tannins. Ending in a hint of vanilla and liquorice.
