in the cellar : Vinification:
This wine is not a by-product of bleeding of grapes for red-wine concentration, but is made from grapes specifically chosen for the production of a rosé. The two red components were harvested at full ripeness and gently pressed. The wine was fermented in second year French barrels, the lees was stirred regularly to allow the solids to enhance the complexity of the wine and stabilise the colour. The Viognier was fermented separately and added to the rosé prior to bottling to add elegance and a fresh component to this stylish wine.

Wood Maturation:
Matured for 12 months in seasoned French oak, malolactic fermentation in the barrels.
