KC Sauvignon Blanc 2012

Light green in appearance, the inclusion of semillon adds some extra weight to this vintage while the sauvignon blanc adds balance to create a light, crisp and fresh easy-drinking wine. Racy acidity compliments the tropical style with flavours of sweet melon, fig and lemongrass coming through.

in the vineyard : This vintage of KC Sauvignon blanc comprises more grapes from Klein Constantia than previous releases. Additionally, grapes were sourced from two other top quality producing, cool climate vineyards in Elgin and Elim.

This combination of grapes grown in cool sites either close to the sea or at higher altitude promises to produce a brilliantly expressive 2012 Sauvignon blanc.

in the cellar : The grapes, both purchased and from Klein Constantia, were chilled overnight before careful processing in the cellar.

Fermentation lasted up to 4 weeks whereafter the wine remained on the lees for 2 months before bottling.
