in the vineyard : Grapes are sourced from a trellised vineyard on the upper slopes of the Fairview farm on Paarl mountain. The vineyard was planted in 2004 on decomposed granite soils. Summer canopy management practices include removal of leaves to open the canopy to sunlight and a few tipping actions. The yield is controlled by dropping bunches post veraison.

in the cellar : The grapes were handpicked on the 19 February 2015. The fruit was hand sorted over a sorting table and fermentation took place in a foudre (open-top French oak vat), after which the skins were gently basket pressed. The wine was matured in 15% American oak barrels and 85% French oak barrels, of which 40% were new French oak barrels. The wine was allowed to mature for 24 months in barrels before being racked, lightly filtered and bottled.
