in the cellar : Crushing: Destemmed and Crushed

Fermentation: 25­-28days barrel fermented. 35% Natural ferment. 65% Inoculated yeast : QA23, D254Íž CY3079 and VIN 7 fermented to 5*B before ending fermentation in barrel. 20% Malolactic fermentation.

Tanks: Fermentation in barrels and maturation on lees in barrels for 10 months. Normal Battonage (once very week for 6 weeks, thereafter one time per month for 6 months).
