Steenberg Echo Red Blend 2011

On the nose, dark fruits, berries, cherries and cassis followed by notes of dark chocolate and cigar box. On the palate, dried herbs and spices and a touch of mint all supported by fine powdery tannins.

in the cellar : Fruit sourced from Constantia and Stellenbosch. Each variety was fermented separately, on the skins, for about 14 days. Pump overs were done three times a day to extract colour and tannin. After fermentation the wines were racked into small French oak barrels - a combination of second and third fill - malolactic fermentation in barrel and aged for 14 months. A light egg white fining was done before bottling in October 2012.
