about the harvest: 
Each grape variety is individually hand-picked and sorted.
Yield: 8-10 tonnes / ha

in the cellar : After gentle crushing, the must is left to macerate and ferment on the skins for 1-2 weeks. After fermentation, the wine is gently pressed and left to mature in French and American barrels for 12-18 months. After the wines have reached maturity the winemaker tastes the barrels individually before deciding on which wines to use for the final blend.
