Steenberg Catharina Red 2001

This full bodied, deep garnet wine is a blend of 3 classic grape varieties: Cabernet Sauvignon, Merlot and Shiraz. It has strong vanilla and chocolate aromas with a ripe berry extract following through onto the palate.

about the harvest: The grapes were harvested in March/April 2001 at a sugar level of 24.5°Balling.

in the cellar : After de-stalking and crushing, the grapes were pumped into stainless steel tanks and inoculated. The grapes were fermented on the skins for 5 days at a temperature of 30°C. After fermentation, the grapes had extended maceration for 3 weeks. he wine was then pressed and matured in 225L French Oak barrels for 18 months. This final blend was 38% Cabernet Sauvignon, 26% Merlot and 36% Shiraz.
