in the vineyard : 

The grapes were sourced from vineyards in the Durbanville and Darling areas. Planted between 1985 and 1995 , these vineyards grow in decomposed granite, and are situated between 50 m and 150 m above sea level.

about the harvest: 

The grapes were harvested by hand between 18° and 19° Balling during mid-February.

in the cellar : 

They were crushed, receiving 4 to 6 hours’ skin contact, and then the juice cool -fermented in temperature-controlled stainless steel tanks for two to three weeks at 13° C, before being left on the lees for a day.
