in the vineyard : The grapes were sourced from vineyards in the Durbanville and Darling areas. Planted between 1985 and 1995 , these vineyards grow in decomposed granite, and are situated between 50 m and 150 m above sea level.

about the harvest: The grapes were harvested by hand between 18° and 19° Balling during mid-February.

in the cellar : They were crushed and received four to six hours of skin contact. Cool-fermentation followed in temperature-controlled stainless steel tanks for two to three weeks at 13ºC before being left on fine fermentation lees for at least four weeks.
